io-consultants begins modernisation of Inselhalle Lindau's kitchen

Inselhalle Lindau is an international conference and congress centre located on Lindau island, Lake Constance, that caters for events of all types and sizes. On the eve of its 35th anniversary, the Inselhalle has been undergoing complete modernisation and extension work since July 2015. The conversion project, which is one of the city of Lindau's major projects, will see the full refurbishment and restructuring of the conference and affiliated restaurant facilities.
The new restaurant on the lakefront will seat up to 280 guests. io-consultants' catering experts are supervising the kitchen modernisation measures to accommodate the changes. Following the contract award in mid 2014, work began in July 2015. To begin with, the entire kitchen technology was dismantled and put into temporary storage. One of the main challenges was dismantling the cooking zone, which had to be transported out of the kitchen in one piece. In the course of the kitchen planning, io-consultants took stock of all the existing equipment and evaluated it for possible future use. Following a visual inspection, any appliances that were still in good working order but unsuitable for use in the new kitchen were sold off. Nevertheless, much of the existing equipment will remain in use, combined with some new purchases.
In future, warm meals will be served all the year round; the kitchen will be linked to the conference and congress centre that provides seating for up to 1,100 guests. Consequently, the facilities must cater for the additional number of guests while maintaining the high quality of its catering services and food.
io-consultants planned the new catering facilities, from basic evaluation to operational start up, according to HOAI 2013 and with the ultimate goal of obtaining EU approval for the kitchen. Tenders will be put out for a new restaurant and catering operator while the renovation is underway. To this purpose, io-consultants' is carrying out a competitive analysis to define a creative haute cuisine concept and assess the investment costs for the future operator.
The city of Lindau plans to complete the project by mid 2017.
